Neapolitan Cupcakes

 A few days ago I needed to make cupcakes.  (You know, when you really NEED to make cupcakes?)  I usually use a box mix for the cake part and then make my favorite homemade frosting.  



 I put out the cupcake liners and pans while I decided which kind of cupcake I wanted to make.  (A plain, unadorned vanilla or a complicated confection worthy of Cupcake Wars?)  So many options.



 Why settle for only one flavor when you can have three?    Chocolate, vanilla and strawberry!  And thus began my initial attempt at making Neapolitan cupcakes. (Inspired by the awesome Spring Neapolitan Cake from Michael at Inspired By Charm.)

I made up the three different batches of cake batter and then layered them in each cupcake liner.  (I didn't level out each layer but I probably should have.)



When they were finished baking and cooled, I brought out the homemade frosting  (my favorite part) and added sprinkles and stuck a little flag on top.  (Made from scrapbook paper and a toothpick.)



 Look at the striped inside.  This particular cupcake didn't have very even layers (definitely not a cupcake supermodel.)  But still so yummy!
